Sidamo

The Diverse Mother Province

Ethiopia's major coffee regions — Yirgacheffe, Sidamo, Guji, Harrar, and Limu — each produce distinctly different flavour profiles shaped by altitude, soil, and microclimate. Yirgacheffe delivers floral citrus notes, Guji produces bold berry intensity, and Sidamo offers a versatile range from nutty to fruity depending on the specific washing station.

The Context

Sidamo (or Sidama) is the historic heartland of southern Ethiopian coffee. It is a massive region with elevations ranging wildly from 1,500 to a towering 2,200 meters above sea level (MASL). Because of its size, "Sidamo" on a contract can mean many things. It produces both exceptional Washed coffees and iconic, berry-forward Naturals.

Washed

Often presents with notes of lemon, cane sugar, and distinct black tea florals. They are balanced and elegant.

Natural

Famous for its intense, juicy fruit profiles—think ripe blueberry, strawberry jam, and a creamy body.

Geographically a small zone within Sidamo, Yirgacheffe has earned its own legendary status. It is largely credited with popularizing the wet-processing method in Ethiopia in the 1970s. With consistently high elevations (mostly above 1,900 MASL) and cool temperatures, cherries here mature slowly, developing incredible density and complex acids.

Yirgacheffe is the gold standard for floral elegance. It is often described as "the champagne of coffee."

The Profile

Intense aromatics of jasmine and honeysuckle. The cup is tea-like with sparkling acidity—notes of bergamot, lemon zest, and peach are classic markers.

Guji

The "Rising Star" Turned Supernova

The Context

Once lumped in with Sidamo, Guji gained recognition as a distinct zone in the early 2000s and hasn't looked back. Southern Guji features rich, red volcanic soil and towering altitudes, often producing larger bean sizes than its neighbors. It is the epicenter of modern processing innovation in Ethiopia, famous for pristine Naturals and experimental Anaerobics.

The Profile

While it can produce lovely floral washed coffees, Guji shines with Naturals. Expect deep sweetness notes of dark plum, blackberry, candied tropical fruit, and sometimes a syrupy, wine-like body.

Harrar

The Ancient Wildcard

The Context

Located in the hot, dry east of the country, Harrar is historic. This is one of the oldest coffee trading hubs on Earth. Because water is scarce, nearly all coffee here is Natural processed (sun-dried in the cherry), often by smallholder farmers in garden environments.

Harrar is unique, polarizing, and beloved. It is the "wildest" of Ethiopian coffees.

Famous for a distinct "dry blueberry" note, alongside dark chocolate, cardamom spice, and earthy undertones. The body is heavy and sometimes winey or gamey.

In Western Ethiopia, the zones of Jimma and Limu are historically known for high volume commercial coffee. However, in the last decade, a revolution in quality has occurred, particularly with washed coffees near Agaro and in the highlands of Limu.

These regions are largely forested and slightly lower in altitude than the south.

The Profile

Known for a rounded, balanced cup. They are less floral than Yirgacheffe but offer pleasing citric acidity, herbal notes, and a solid chocolate base. They are excellent workhorse coffees for blends or approachable single origins.
